Our kitchen philosophy, including the importance of heritage and curiosity, is demonstrated by what we feature on the menu. Our curiosity influences our choice to include cooking techniques that are not frequently used even in other gourmet kitchens.

The menus created by Chef Andrea Barcia are enriched by the collaboration with two renowned chefs: Chef Peter Brunel and Pastry Chef Loretta Fanella.
The vegetable garden
Near the restaurant, there is an area of terraced land around 200 square meters in size that is divided into 7 quadrants and fenced in.
This area is a vegetable garden, created not just for ornamental purposes for the Capanna Suites Agriturismo, but also to guarantee our restaurant, Il Passaggio, a constant source of homegrown, seasonal vegetables and edible flowers which Chef Barcia personally selects.
The care of the garden is entrusted to a specialized collaborator who takes care of it throughout the year by rotating the crops according to the calendar and cultivating it using principles inspired by biodynamics.
